Cooking For the Week:

One of the challenges that I face day
to day is I have to cook for only 3! I was accustomed to cooking for 6+ and of
course my family was a huge fan of leftovers. Now that I have moved in to the
camper with Ty, I have to completely change the way that I cook. I am cooking
for Ty, his dad, and me. We try and avoid leftovers as much as possible simply because
we have such a small freezer and fridge. (my parents had 2 full size fridges,
and 2 large freezers so we had a bit more room there.) I have gotten better,
but they can also be a bit picky every once in a while. That’s just fine, I
know a lot of things to make and so-far just about everything that I have made
has been a huge hit. So when I sit down on Friday and try and come up with what
to make the next week, it can be hard. But they always give me the benefit of
the doubt and will try anything that I put in front of them (They are even
polite enough that if it’s terrible they don’t say anything).
Every week me and Ty’s Father trade-off
who cooks when. One week I cook 3 and he cooks 2-4 (depending on if we get
pizza, and if me and Ty go out for the regular date night on Saturday.) Then
the next week it’s the opposite. The fact that we work 6 days a week and 10+
hours a day can make coming home and cooking a big elaborate delicious dinner
can be kind of hard. (Yes, I love home cooking no matter how long it takes and
how much clean up I have. You simply cannot beat a home cooked meal!) So the
crockpot (slow cooker, whatever you call it.) has become one of my life savers.
There are so many things that you can make in one of these! And you don’t have
to do anything but turn it on really! Super nice to come home on a cold day and
have a delicious and warm meal!
So when I sit down to finally prep,
the first place I go is Pinterest. I try and find at least 1 new thing to make
each week and if they love it, I make it again. If not, well then it disappears
and I don’t make it again! I don’t make all meals in the crockpot, so every
once in a while I will set a Sunday aside to make something scrumptious that
takes up a large portion of the day.
Once I have the recipes picked out I
cut the servings down to just enough for 3 people. If the recipe that its says
it serves 4, I just leave it. It will likely get eaten either way. This means,
little clean up and of course, no leftovers!
After cutting down the recipes I
pick out what nights we will have what and write it down in my agenda and then
write up the shopping list. We don’t go grocery shopping until Sunday, but I like
to be prepared and ready to go so I don’t have to throw It together and end up
with unhealthy meals that no one likes.
